Struck dumb at the thought of another week of hungry mouths at dinnertime? Amazing how quickly Monday comes around and I’m left wondering, “What the hell am I going to feed everyone this week?” Which is weird, considering I’ve now published two cookbooks and three e-books on the topic and have around 200 recipes up my sleeve.
Still, being excited about making dinner EVERY SINGLE NIGHT is a battle for me too. Surely, SURELY, a night of air wouldn’t hurt while I have my feet up and my kindle (loaded with a crappy bodice-ripper) in hand? Alas no, pesky kids want actual food. So I’m trawling for meals that make me happy and inspired. Perhaps one of these will tickle your fancy this week too…

We did out our menu plan this week and have some yummy stuff on it – mexican chook, pasta, beef stirfry and roast lamb π I love rice paper rolls… might have to squeeze them in for lunch haven’t had them in ages!

I menu plan as well – and even so its hard to not get stuck in a rut. Especially with limited time to cook and clean up after, plus a small and fussy eater.

Cheesy Broccoli Chicken tonight and Eggplant Parmagiana tomorrow… yum! Those chicken nuggets look good. Might have to try them on Wed. Thanks for the tip.

Doing chicken rice paper rolls here this week π I was going to do your Jerk Chicken tonight and use the leftovers in the rolls tomorrow, but my mini blender has seen its used by date, bits of plastic started falling off the inside where the blade turning bit goes through the lid π¦ So alas, I have fudged some herby, sweet chilli marinadey thing, will see how it goes.
Also doing shepherds Pie and Vegie and chick pea strudel and a meal at my MILs. I think I will do the Witches Stew and Vegie Slice over the weekend. It really is soup weather here right now.

Rice Paper rolls are a quick and easy staple here too.
Love the fresh garden mint in them.
I am a last minute dinner preparer also.
